December Beer Spotlight
Growing up half-Hispanic I had the pleasure of indulging in many holiday Traditions. This beer is an ode to one of my favorites as a child. Every holiday season my mother would make her delicious "Champurrado" a Mexican take on Hot Chocolate. I always looked forward to it every year! That rich chocolate taste mixed with the cinnamon and vanilla that just seemed to melt in your mouth! That and the sense of family that came with it is the backbone to this beer. My good friend John from King Cong also shared the same experience and passion for tradition and family. So we thought what better way to showcase all of that then in a beer. This Imperial Stout clocks in at 10.5% conditioned on tons of Cocoa Powder, Ancho Chiles, Guajillo Chiles, Cinnamon, and Vanilla.
From our family to yours we hope you enjoy! Cheers!

October Beer Spotlight : Locals Lager Helles Lager
Locals Lager
Helles Lager
5.3% ABV
17 IBU
As our name precedes us we very much believe in local. The backbone of our brewery is and was founded on just that. With that being said we wanted to show our love and support for our local community and awesome county! We thought what better way to showcase our appreciation than to of course brew a beer. Introducing our hometown roots driven “Locals Lager.” This beer is what we like to say in the industry a “crusher.” Our very first ever Helles Lager. We start with Barke Pilsner and Munich malts to give it that bready, crackery, sweetness backbone that German lagers are known for. We then go Noble with the hops and top it off with one of my personal faves, Hallertau
Mittlefrüh. Mittelfrüh brought it all together with just enough bitterness, floral, and herbal hop presence. This beer is for you guys! We appreciate every single one of you! Without your support we would not be anywhere near what we are today! So thank you for supporting us, thank you for being such an amazing community and taking us in, and thank you for being an awesome county with thousands of awesome people! We couldn’t be more grateful to continue to serve
you guys! Here’s to you!

Not Just Seasonal — Intentional
Our menu changes with the seasons, but not because it has to. It’s because we want it to.
We brew with what inspires us: crisp air, fresh harvests, longer nights, or the first signs of spring. Each new release is our way of capturing a moment — in flavor, feel, and vibe.
It’s not just about what’s trending. It’s about what feels right, right now.
Come taste what’s new — and what’s next.

Behind Every Pint: People, Not Just Process
Great beer doesn’t just come from stainless tanks and fermentation charts — it comes from the people behind them.
From the brewer testing new hop combos to the team pouring pints with pride, it’s the human touch that brings each beer to life.
At our brewery, we believe every pour is a connection — between the craft, the community, and the conversation it sparks.
So next time you raise a glass, here’s to the hands that made it happen.

Craft Beer, Crafted Right
Craft beer is more than what’s in the glass — it’s how it gets there.
It’s the small batches, the bold ideas, and the time spent dialing in every detail. It’s about brewing with purpose, not shortcuts. From hops that punch to malts that mellow, every ingredient is chosen with care — and every beer tells its own story.
At our brewery, we don’t just make beer. We craft it. With curiosity, creativity, and a deep respect for the process.
Whether you’re sipping a hazy IPA, a smooth stout, or something totally unexpected, we hope you taste the difference — and feel right at home while you do.

Why Seasonal Beers Just Taste Better
There’s something special about sipping a beer that matches the moment. A crisp lager on a hot day. A spiced ale as the leaves change. A rich porter by the fire. Seasonal beers don’t just reflect the calendar — they capture the feeling of the season.
Brewing with the rhythm of the year lets us get creative with ingredients at their peak — think citrus in summer, fresh hops in fall, or warming spices in winter. It also keeps our lineup fresh, fun, and full of surprises.
So next time you see a seasonal release, give it a try. It might just be the perfect pairing for the season you’re in.

What’s the Deal with Seasonal Beers?
Seasonal beers are a brewery’s way of celebrating what’s happening outside — and inside the brewhouse. You’ll find light, refreshing styles in summer, bold stouts and porters in winter, and creative flavors like pumpkin, spice, or fresh hops in the fall. Brewing seasonally lets us work with fresh ingredients, experiment with new ideas, and keep things exciting for you all year round.

The Importance of Water in Brewing
It may sound simple, but water is the unsung hero of every beer. It makes up over 90% of your pint and can drastically influence flavor and mouthfeel. Brewers often adjust water chemistry to match the beer style they’re making — for example, soft water for a Czech pilsner or harder water for a robust stout. Great beer starts with great water, and we take ours seriously.

What Are Hops, and Why Do They Matter?
Hops are the flowers of the hop plant, and they’re what give beer its bitterness, aroma, and flavor balance. Different hop varieties bring different notes — from citrus and pine to tropical fruit and spice. In styles like IPAs, hops take center stage. But even in maltier beers, hops are quietly working in the background to keep your beer crisp, drinkable, and delicious.

How Fresh Is Your Beer? Why It Matters
Beer is best when it’s fresh — especially hop-forward styles like IPAs. Over time, oxygen, light, and temperature changes can impact flavor. That’s why we carefully store, transport, and serve our beers to keep them tasting just as the brewer intended. When you drink local and fresh, you’re getting the full flavor experience. Pro tip: always check packaging dates if you’re grabbing beer off the shelf!

What’s the Difference Between Ales and Lagers?
You’ve probably seen “ale” and “lager” on our tap list — but what’s the difference? It all comes down to yeast and fermentation. Ales use top-fermenting yeast and are brewed at warmer temperatures, often resulting in bold, fruity flavors. Lagers use bottom-fermenting yeast and are fermented cold, creating clean, crisp, and smooth brews. Both styles offer tons of variety, and the best way to learn is to taste them side by side!

August Beer Spotlight
What's a Tropical IPA you might say? An IPA inspired by all the wonderful fruits from the Tropics. But without adding any actual fruit to the beer. All the fruit characteristics are derived from the delicious hops we used. Citra for the citrus undertone, El Dorado for the Pineapple & Papaya, and Sabro for that creamy and full Coconut mouthfeel. So sit back, slow down, and enjoy the Island Times!
Cheers!
