Imperial Pastry Stout

Winner of the Silver Medal in the Chocolate Beer category at the Great American Beer Festival!
Growing up half-Hispanic I had the pleasure of indulging in many holiday Traditions. This beer is an ode to one of my favorites as a child. Every holiday season my mother would make her delicious "Champurrado" a Mexican take on Hot Chocolate. I always looked forward to it every year! That rich chocolate taste mixed with the cinnamon and vanilla that just seemed to melt in your mouth! That and the sense of family that came with it is the backbone to this beer. My good friend John from King Cong also shared the same experience and passion for tradition and family. So we thought what better way to showcase all of that then in a beer. This Imperial Stout clocks in at 10.5% conditioned on tons of Cocoa Powder, Ancho Chiles, Guajillo Chiles, Cinnamon, and Vanilla.

Brewing Ordinary Bitter | Short & Shoddy
Ordinary Bitter might have the least appealing name in all of the BJCP guidelines, but it’s neither particularly bitter nor all that ordinary. The Brits have been brewing this style for hundreds of years using traditional methods, but what happens if we take a bunch of short cuts? That’s what Brülosophy contributor, Will Lovell, recently with an Ordinary Bitter he brewed Short & Shoddy style.
